Zbytek u\u017e je hra\u010dka.<\/p>\n\n<p>Pot\u0159ebujeme kilo mlet\u00e9ho vep\u0159ov\u00e9ho, nic libov\u00e9ho, ale ani \u010dist\u00e9\ns\u00e1dlo. Ide\u00e1ln\u00ed je hezky p\u016fl na p\u016fl, kousek p\u011bkn\u011b prorostl\u00e9ho b\u016f\u010dku.\nA\u00a0kdy\u017e koup\u00edte (u\u00a0d\u016fv\u011bryhodn\u00e9ho \u0159ezn\u00edka) u\u017e namlet\u00e9, \u0161patn\u011b taky\nneud\u011bl\u00e1te. K\u00a0tomu p\u016fl a\u017e t\u0159i\u010dtvrt\u011b kila s\u00fdra. Tady je lep\u0161\u00ed naopak\nsp\u00ed\u0161 m\u00e9n\u011b tu\u010dn\u00fd, 30% eidam se osv\u011bd\u010dil nejl\u00e9pe. Vytrvalci se pocvi\u010d\u00ed\nse struhadlem, n\u00e1m ostatn\u00edm pom\u016f\u017ee mix\u00e9r \u010di <em>cutter<\/em>. Na \u010d\u00edm\nv\u011bt\u0161\u00ed kousky s\u00fdr bude, t\u00edm v\u00fdrazn\u011bj\u0161\u00ed mozaiku ve v\u00fdsledku vytvo\u0159\u00ed;\ns\u00fdr nastrouhan\u00fd najemno pak zajist\u00ed velmi kompaktn\u00ed hmotu. Mlet\u00e9 maso a\ns\u00fdr d\u00e1me do velk\u00e9\u00a0m\u00edsy.<\/p>\n\n<p>Ko\u0159en\u00edm to poka\u017ed\u00e9 jinak, podle okam\u017eit\u00e9 chuti. Tentokr\u00e1t jsem vzal\nl\u017ei\u010dku rozmar\u00fdny, l\u017ei\u010dku drcen\u00e9ho km\u00ednu a v\u00a0hmo\u017ed\u00ed\u0159i jsem je rozdrtil\nna pr\u00e1\u0161ek. Pak jsem p\u0159idal je\u0161t\u011b l\u017ei\u010dku \u0161alv\u011bje a tro\u0161ku saturejky,\np\u016fl l\u017ei\u010dky soli (se sol\u00ed opatrn\u011b, slan\u00fd s\u00fdr dok\u00e1\u017ee nep\u0159\u00edjemn\u011b\np\u0159ekvapit) a \u010dty\u0159i strou\u017eky \u010desneku. Rozma\u010dkal jsem to na pastu a\nrozm\u00edchal s\u00a0trochou olivov\u00e9ho oleje a asi p\u016fl deci \u010derven\u00e9ho v\u00edna. Pak\njsem se \u0161el \u010dtvrt hodiny vzpamatov\u00e1vat z\u00a0t\u00e9 skvostn\u00e9 v\u016fn\u011b, kter\u00e1 m\u011b\nskoro omr\u00e1\u010dila. Za tu dobu se ko\u0159en\u00ed tak akor\u00e1t rozle\u017eelo, tak\u017ee jsem ji\nnalil na maso a s\u00fdr v\u00a0m\u00edse a v\u0161e poctiv\u011b a d\u016fkladn\u011b zpracoval.<\/p>\n\n<p>Nic v\u00edc nen\u00ed pot\u0159eba p\u0159id\u00e1vat. Zapome\u0148me na vaj\u00ed\u010dka, strouhanky a\njin\u00e1 nastavovadla, z\u00e1klad je kompletn\u011b hotov. Hmota je p\u011bkn\u011b pevn\u00e1 a\ndob\u0159e se tvaruje. Je mo\u017en\u00e9 z\u00a0n\u00ed upl\u00e1cat cokoli\u00a0\u2013 od jedn\u00e9 velk\u00e9\nbuclat\u00e9 \u0161i\u0161ky po spoustu mal\u00fdch karban\u00e1tk\u016f. M\u016f\u017eete ji tak\u00e9\nrozprost\u0159\u00edt na f\u00f3lii, nahoru polo\u017eit p\u00e1rek nebo va\u0159en\u00e1 vejce a smotat do\nrol\u00e1dy. Ostatn\u011b proto tomu tak\u00e9 n\u00e1zev <em>rol\u00e1da<\/em> z\u016fstal, i\u00a0kdy\u017e u\u017e\nd\u00e1vno dovnit\u0159 nic ned\u00e1v\u00e1me a vysta\u010d\u00edme si jen s\u00a0upl\u00e1can\u00fdmi\n\u0161i\u0161kami.<\/p>\n\n<p>Na pek\u00e1\u010d d\u00e1me trochu vody, posad\u00edme do n\u00ed vytvarovan\u00e9 \u0161i\u0161ky a\nstr\u010d\u00edme do trouby rozeh\u0159\u00e1t\u00e9 na cca 170\u00a0\u00b0C. Po hodin\u011b obr\u00e1t\u00edme, po\ndal\u0161\u00ed p\u016flhodin\u011b obr\u00e1t\u00edme zp\u00e1tky a pe\u010deme je\u0161t\u011b p\u016fl hodiny. Celkem\ntedy pe\u010deme dv\u011b hodiny, p\u0159i\u010dem\u017e posledn\u00ed hodinu a p\u016fl pod vlivem lib\u00e9\nv\u016fn\u011b linouc\u00ed se cel\u00fdm domem intenzivn\u011b slint\u00e1me a odh\u00e1n\u00edme ode dve\u0159\u00ed\nzv\u011bdav\u00e9 sousedy.<\/p>\n\n<div class=\"center\">\n\t<div><a class=\"imagelink\"\n\thref=\"\/pixynergia\/wp-content\/uploads\/2008\/02\/img_7166.jpg\" rel=\"lightbox\"\n\ttitle=\"Vep\u0159ovo-s\u00fdrov\u00e1 rol\u00e1da\"><img id=\"image159\"\n\tsrc=\"\/pixynergia\/wp-content\/uploads\/2008\/02\/img_7166.jpg\"\n\talt=\"vep\u0159ovo-s\u00fdrov\u00e1 rol\u00e1da\" style=\"width:320px\" \/><\/a><\/div>\n<\/div>\n\n<p>Nejlep\u0161\u00ed na t\u00e9to rol\u00e1d\u011b je, \u017ee m\u00e1 hned dv\u011b vyu\u017eit\u00ed.<\/p>\n\n<p>M\u016f\u017eeme ji pod\u00e1vat horkou, \u010derstv\u011b vyta\u017eenou z\u00a0trouby, s\u00a0va\u0159en\u00fdmi\nbramborami a polit\u00e9 b\u00e1je\u010dnou \u0161\u0165\u00e1vou, kter\u00e9 v\u00a0pek\u00e1\u010di z\u016fstane docela\nhodn\u011b. Jak\u00e9koli ot\u00e1len\u00ed je na \u0161kodu, ope\u010den\u00e1 krusta je k\u0159upav\u00e1 a\nvnit\u0159ek po rozkrojen\u00ed neuv\u011b\u0159iteln\u011b \u0161\u0165avnat\u00fd. Pro tento zp\u016fsob konzumace\nje nejlep\u0161\u00ed vytvo\u0159it men\u0161\u00ed \u0161i\u0161ti\u010dky o\u00a0velikosti jedn\u00e9 porce (cca\n150\u00a0g). D\u00e1 se pochopiteln\u011b i\u00a0oh\u0159\u00e1t, ale pak u\u017e nikdy nen\u00ed obsah tak\n\u0161\u0165avnat\u00fd jako hned po vyta\u017een\u00ed z\u00a0trouby.<\/p>\n\n<p>A\u00a0druh\u00e1 mo\u017enost konzumace je naopak druh\u00fd den. K\u00a0tomu je t\u0159eba\nabsolvovat intenzivn\u00ed jog\u00ednsk\u00fd tr\u00e9nink v\u016fle, proto\u017ee mus\u00edme na rol\u00e1du na\nn\u011bkolik hodin \u00fapln\u011b zapomenout, nechat ji vystydnout a pak odlo\u017eit\nk\u00a0odpo\u010dinku do lednice, nejl\u00e9pe p\u0159es noc. Tam se p\u0159em\u011bn\u00ed ve vo\u0148avou\ndelikatesu s\u00a0kompaktn\u00ed konzistenc\u00ed, kterou lze kr\u00e1jet i\u00a0na tenou\u010dk\u00e9\npl\u00e1tky, kter\u00e9 se rozpust\u00ed na jazyku. Pro tento p\u0159\u00edpad je zase vhodn\u00e9\nvytvarovat sp\u00ed\u0161e jednu \u010di dv\u011b v\u011bt\u0161\u00ed\u00a0\u0161i\u0161ky.<\/p>\n\n<p>Zvolil jsem kompromis: p\u016fl tak a p\u016fl tak. N\u011bkolik mal\u00fdch \u0161i\u0161ti\u010dek\nbudeme pod\u00e1vat tepl\u00fdch s\u00a0brambory (k\u00a0m\u00e9 velk\u00e9 l\u00edtosti a\u017e z\u00edtra, ale\njinak to ne\u0161lo) a jedna velk\u00e1 \u0161i\u0161ka nab\u00edr\u00e1 s\u00edly v\u00a0lednici. Kv\u016fli fotce\njsem ji rozkrojil p\u0159ed\u010dasn\u011b, ale snad u\u017e byla dostate\u010dn\u011b odpo\u010dat\u00e1 a\np\u0159\u00edli\u0161 j\u00ed to nevadilo.<\/p>\n\n<p><em>Tip:<\/em> zkuste tuhle rol\u00e1du pou\u017e\u00edt jako hamburger. Rozpe\u010dte\nhamburgerovou housku, nebo ope\u010dte pl\u00e1tek toastov\u00e9ho chleba, lehce nam\u00e1zn\u011bte\nho\u0159cic\u00ed, polo\u017ete cca centimetrov\u00fd pl\u00e1tek hork\u00e9 masovo-s\u00fdrov\u00e9 rol\u00e1dy,\np\u0159idejte p\u00e1r kousk\u016f \u010derstv\u00e9 papriky, kole\u010dko raj\u010dete, list sal\u00e1tu nebo\ndal\u0161\u00ed zeleninu dle chuti a zakousn\u011bte.
