Ale teprve v\u010dera jsem\nho s\u00e1m vyzkou\u0161el a hned si tohle typicky britsk\u00e9 j\u00eddlo\u00a0\u2013 \u010di sp\u00ed\u0161e\np\u0159\u00edlohu\u00a0\u2013 za\u0159azujeme mezi rodinn\u00e9 favority.<\/p>\n\n<p>To bylo tak. Va\u0159il jsem kotel v\u00fdvaru, tentokr\u00e1t maso zvl\u00e1\u0161\u0165 a zeleninu\nzvl\u00e1\u0161\u0165, a nev\u011bd\u011bl jsem, co s\u00a0tou plnou m\u00edsou va\u0159en\u00e9 ko\u0159enov\u00e9 zeleniny\nud\u011blat. A\u00a0vzpomn\u011bl jsem si pr\u00e1v\u011b na <em>Bubble and Squeak<\/em>. Sice\norigin\u00e1ln\u00ed postupy operuj\u00ed hodn\u011b se zel\u00edm a r\u016f\u017ei\u010dkovou kapustou, ale na\ndruh\u00e9 stran\u011b je to v\u00a0z\u00e1sad\u011b velmi voln\u00fd recept. Jeho p\u016fvodn\u00edm smyslem je\ntoti\u017e pr\u00e1v\u011b zbavit se elegantn\u011b zbytk\u016f zeleniny, obvykle po v\u00edkendov\u00e9m\ngrilov\u00e1n\u00ed. Je to takov\u00e9 typick\u00e9 CDD (<em>Co D\u016fm Dal<\/em>). Z\u00e1kladem je\nzelenina, brambory a cibule, typick\u00e9 je hl\u00e1vkov\u00e9 zel\u00ed a\/nebo kapusta\u00a0\u2013\nale d\u00e1 se p\u0159id\u00e1vat leccos dal\u0161\u00edho, od slaniny po hr\u00e1\u0161ek.<\/p>\n\n<p>J\u00e1 jsem bohu\u017eel nem\u011bl k\u00a0dispozici nejen zel\u00ed, ale dokonce n\u00e1m do\u0161la\ni\u00a0cibule. Ale nakonec to v\u016fbec nevadilo. Vysta\u010dil jsem si s\u00a0m\u00edsou zeleniny,\np\u0159ibli\u017en\u011b stejn\u00fdm mno\u017estv\u00edm va\u0159en\u00fdch brambor (zbytky od ob\u011bda nebo\nz\u00a0p\u0159edchoz\u00edho dne v\u016fbec nejsou na \u0161kodu) a trochou zelen\u00e9ho hr\u00e1\u0161ku.\nRozp\u00e1l\u00ed se p\u00e1nev, na n\u00ed se rozpust\u00ed trocha m\u00e1sla a oleje (mn\u011b sta\u010dil\nolej\u00a0\u2013 olivov\u00fd byl fajn) a najemno nasekan\u00e1 cibule se osma\u017e\u00ed dozlatova.\nBez cibule to taky jde, ale rozhodn\u011b tomu prosp\u011bje. Brambory se zeleninou se\nrozma\u010dkaj\u00ed a p\u0159idaj\u00ed na p\u00e1nev (nebo se rozma\u010dkaj\u00ed p\u0159\u00edmo v\u00a0p\u00e1nvi).\nSma\u017e\u00ed se pom\u011brn\u011b dlouho, \u0161\u0165ouchadlem\/ma\u010d\u00adkadlem se hmota udus\u00e1v\u00e1 do\nplacky p\u0159es celou plochu p\u00e1nve a ono to dole bubl\u00e1 a uch\u00e1zej\u00edc\u00ed p\u00e1ra\nsrandovn\u011b p\u00edsk\u00e1. V\u017edy kdy\u017e se spodn\u00ed strana osma\u017e\u00ed dozlatova, obr\u00e1t\u00ed\nse to a sma\u017e\u00ed z\u00a0druh\u00e9 strany. Doporu\u010duju obracet po \u010d\u00e1stech obrace\u010dkou,\nne\u017e se sna\u017eit ot\u00e1\u010det to najednou jako pala\u010dinku. Zkusil jsem tak jednou a\nnedopadlo to nejl\u00e9pe. Beztak nen\u00ed pot\u0159eba, ba ani \u017e\u00e1douc\u00ed vytvo\u0159it na\np\u00e1nvi n\u011bjakou kompaktn\u00ed placku: ty osma\u017een\u00e9 kousky je po obr\u00e1cen\u00ed\npot\u0159eba trochu zapracovat dovnit\u0159 a osma\u017eit i\u00a0to, co bylo uvnit\u0159. Ve\nv\u00fdsledku je spousta osma\u017een\u00fdch a k\u0159upav\u00fdch kousk\u016f. A\u00a0taky nikoho nesm\u00ed\np\u0159ekvapit, \u017ee se p\u016fvodn\u00ed mno\u017estv\u00ed brambor a zeleniny b\u011bhem toho dlouh\u00e9ho\nsma\u017een\u00ed smrskne asi na polovinu (ale zase je to velmi v\u00fd\u017eivn\u00e9 a syt\u00e9).\nPokud byly brambory i\u00a0zelenina uva\u0159en\u00e9 ve slan\u00e9 vod\u011b, nen\u00ed pot\u0159eba nijak\ndochucovat\u00a0\u2013 obejde se to zcela bez jak\u00e9hokoli ko\u0159en\u00ed.<\/p>\n\n<p>\u017dena p\u0159i\u0161la s\u00a0d\u011btmi dom\u016f, pr\u00e1v\u011b kdy\u017e bylo hotovo, a u\u017e mezi dve\u0159mi\nse rozpl\u00fdvala nad intenzivn\u00ed v\u016fn\u00ed p\u0159ipom\u00ednaj\u00edc\u00ed d\u011btstv\u00ed a sma\u017een\u00e9\n\u0161kub\u00e1nky. Pod\u00e1vat se to d\u00e1 s\u00a0pe\u010den\u00fdm i\u00a0studen\u00fdm masem (zbytky od\nob\u011bda), sma\u017een\u00fdmi klob\u00e1skami, ale t\u0159eba i\u00a0jako anglick\u00e1 sn\u00eddan\u011b se\nsma\u017een\u00fdmi vaj\u00ed\u010dky, fazolemi, pe\u010den\u00fdmi raj\u010daty, p\u00e1rky, slaninou\u00a0\u2013 jak\nje libo. Osobn\u011b bych volil bu\u010fto n\u011bjak\u00e9 do k\u0159upava vype\u010den\u00e9 kousky masa\n(a v\u00a0tom p\u0159\u00edpad\u011b p\u0159idat do brambor hodn\u011b zel\u00ed nebo kapusty), nebo naopak\njemn\u00fd p\u0159\u00edrodn\u00ed pl\u00e1tek. Chu\u0165 <em>Bubble &amp; Squeak<\/em> je velmi\nintenzivn\u00ed a je skoro na \u0161kodu ji kombinovat s\u00a0n\u011b\u010d\u00edm podobn\u011b v\u00fdrazn\u00fdm,\njako je t\u0159eba sekan\u00e1 nebo karban\u00e1tky. Koneckonc\u016f je to dobr\u00e9 i\u00a0samotn\u00e9,\nmasa net\u0159eba.
