Bylo mi jasn\u00e9 jen jedno: ta\nvep\u0159ov\u00e1 kotleta \u010dek\u00e1 mraz\u00e1ku u\u017e p\u0159es m\u011bs\u00edc, ned\u00e1 se nic d\u011blat, je na\n\u0159ad\u011b. Jen\u017ee co s\u00a0takovou <em>vep\u0159ovou pe\u010den\u00ed<\/em> prov\u00e9st? Maso je to\nv\u00a0z\u00e1sad\u011b such\u00e9, knedl\u00edky skoro nej\u00edme a na n\u011bjak\u00e9 zel\u00ed podobn\u00e9 \u010desk\u00e9\ndelikatesy chu\u0165 nem\u00e1me. Dva \u201esteaky\u201c jsme si dali v\u010dera jako minutku, ale\ncelou kotletu takhle zkonzumovat nem\u016f\u017eem. Je t\u0159eba naj\u00edt, nebo vymyslet\nn\u011bjak\u00fd recept. A\u00a0proto\u017ee hledat se mi necht\u011blo, do\u0161lo na vym\u00fd\u0161len\u00ed.\nTak\u017ee po dlouh\u00e9 dob\u011b op\u011bt n\u011bco z\u00a0vlastn\u00ed tvorby.<\/p>\n\n<ul>\n\t<li>asi kilo vep\u0159ov\u00e9 kotlety (pe\u010den\u011b) bez kosti<\/li>\n<\/ul>\n\n<p>Ale v\u00a0z\u00e1sad\u011b by to mohlo b\u00fdt i\u00a0jak\u00e9koli jin\u00e9 maso. Kotletu jsem\nnakr\u00e1jel na pl\u00e1tky, trochu naklepal, osolil, opep\u0159il (no dobr\u00e1, kv\u016fli\nd\u011btem jsem nam\u00edsto pep\u0159e pou\u017eil <em>saturejku<\/em>) a naskl\u00e1dal do\nvymazan\u00e9ho \u201esrn\u010d\u00edho h\u0159betu\u201c. Prvn\u00ed kotletku p\u011bkn\u011b ke kraji, hranu\nzarovnanou s\u00a0vr\u0161kem formy, p\u0159e\u010dn\u00edvaj\u00edc\u00ed spodek rozta\u017een\u00fd po dn\u011b.\nDal\u0161\u00ed stejn\u011b o\u00a0kus vedle, tak\u017ee mezi nimi vznikly asi centimetrov\u00e9 kapsy.\nDeset se mi jich do t\u00e9 formy ve\u0161lo, mezi nimi m\u00edsto na dal\u0161\u00ed\u00a0\u2013 kdybych\nje dal t\u011bsn\u011b k\u00a0sob\u011b, ve\u0161lo by se jich tam mysl\u00edm akor\u00e1t dvacet.<\/p>\n\n<p>Pak jsem si p\u0159ipravil jak\u00e9si <em>\u010datn\u00ed<\/em>, kter\u00e9 p\u0159ijde do\nt\u011bch\u00a0kapes.<\/p>\n\n<ul>\n\t<li>4\u00a0st\u0159edn\u011b velk\u00e9 cibule<\/li>\n\n\t<li>4\u00a0strou\u017eky \u010desneku<\/li>\n\n\t<li>po\u0159\u00e1dn\u00e1 hrst rozinek<\/li>\n\n\t<li>cca stejn\u00e9 mno\u017estv\u00ed su\u0161en\u00fdch raj\u010dat<\/li>\n\n\t<li>hrst \u010derstv\u00e9 bazalky<\/li>\n\n\t<li>asi hrnek passaty (neochucen\u00e9ho raj\u010datov\u00e9ho protlaku)<\/li>\n\n\t<li>med<\/li>\n\n\t<li>olivov\u00fd olej<\/li>\n<\/ul>\n\n<p>Cibulku jsem nasekal nadrobno a osma\u017eil pomalu na oleji. Nesm\u00ed se ud\u011blat\n\u00fapln\u011b dohn\u011bda, proto\u017ee se bude je\u0161t\u011b dlouho p\u00e9ct\u00a0\u2013 kdy\u017e lehce\nzezl\u00e1tla, byl \u010das p\u0159ihodit nasekan\u00fd \u010desnek, bazalku, p\u0159edem namo\u010den\u00e9\nrozinky se su\u0161en\u00fdmi raj\u010daty a zal\u00edt passatou. Na konec jsem p\u0159idal asi\nl\u017e\u00edci medu, osolil a nechal asi minutku pova\u0159it, aby se chut\u011b po\u0159\u00e1dn\u011b\nspojily.<\/p>\n\n<p>Mezi kotletami bylo 9\u00a0mezer, rozd\u011blil jsem si tedy tu majdu na t\u0159etiny,\nabych dal do ka\u017ed\u00e9 \u201ekapsy\u201c p\u0159ibli\u017en\u011b stejn\u00e9 mno\u017estv\u00ed. Vy\u0161lo to\nakor\u00e1t, forma byla p\u0159esn\u011b zapln\u011bna. Trochu jsem to um\u00e1\u010dkl, srovnal a pak\nu\u017e jen zakryl alobalem (prop\u00edchat vidli\u010dkou!) a pekl zvolna asi 2\u00a0hodiny\n(160\u00a0\u00b0C). Von\u011blo to ukrutn\u011b dob\u0159e po cel\u00e9m dom\u011b. <em>(Ke konci to bylo\ntrochu hor\u0161\u00ed, proto\u017ee \u010d\u00e1st tekutiny p\u0159etekla z\u00a0formy a sp\u00e1lila se na\nplechu, kter\u00fd jsem pod ni proz\u0159eteln\u011b dal. Na\u0161t\u011bst\u00ed na chu\u0165 ani v\u016fni\ntoho uvnit\u0159 to \u017e\u00e1dn\u00fd vliv nem\u011blo.)<\/em><\/p>\n\n<p>Te\u010f by se to mohlo rovnou pod\u00e1vat, ale serv\u00edrovat by to bylo t\u0159eba\nnejsp\u00ed\u0161 l\u017e\u00edc\u00ed\u00a0\u2013 hork\u00e9 se to hodn\u011b rozpad\u00e1 a na n\u011bjak\u00e9 kr\u00e1jen\u00ed\nnem\u016f\u017ee b\u00fdt ani pomy\u0161len\u00ed. J\u00e1 jsem to ale d\u011blal ve\u010der, tak\u017ee jsem to po\nupe\u010den\u00ed nechal vychladnout a p\u0159es noc odpo\u010dinout v\u00a0lednici (dobr\u00e9 by to\nbylo zat\u00ed\u017eit, jako kdy\u017e se d\u011bl\u00e1 tla\u010denka nebo pa\u0161tika). Dnes to \u0161lo\nkr\u00e1sn\u011b vyklopit z\u00a0formy a jak\u017e tak\u017e kr\u00e1jet. Kr\u00e1jet se mus\u00ed \u0161ikmo, pod\n\u00fahlem 45\u00b0, aby vznikly p\u011bkn\u011b pruhovan\u00e9 kousky:\nmaso-\u010datn\u00ed-maso-\u010datn\u00ed-maso. Kope\u010dek bramborov\u00e9 ka\u0161e je p\u0159esn\u011b to\nprav\u00e9, co to je\u0161t\u011b pot\u0159ebuje.<\/p>\n\n<p>Byl to prvn\u00ed pokus a je\u0161t\u011b nebyly spr\u00e1vn\u011b vylad\u011bn\u00e9 ingredience a\npostup, aby n\u00e1pl\u0148 byla trochu kompaktn\u011bj\u0161\u00ed. Kombinace cibule, cukr\u016f a\n\u0161\u0165\u00e1vy z\u00a0masa sice zajistila spr\u00e1vn\u011b rosolovitou konzistenci, jak jsem\np\u0159edpokl\u00e1dal, ale p\u0159ece jen se to je\u0161t\u011b dost rozpad\u00e1 a nedr\u017e\u00ed to tak\npohromad\u011b, jak jsem si p\u0159edstavoval. Cht\u011blo by to tu \u201emaltu\u201c ud\u011blat\npevn\u011bj\u0161\u00ed. P\u0159\u00ed\u0161t\u011b budu pro zm\u011bnu experimentovat s\u00a0ku\u0159ec\u00edmi \u0159\u00edzky a\nv\u00a0n\u00e1plni se \u0161pen\u00e1tem a s\u00fdry, mo\u017en\u00e1 i\u00a0be\u0161amel tam zkus\u00edm zapojit.\nMo\u017enost\u00ed jsou spousty.
