A\u00a0po mnoha experimentech jsem zjistil, \u017ee podstatou indick\u00e9ho\nkar\u00ed nen\u00ed v\u016fbec maso, ale zelenina\u00a0\u2013 maso je tam jen takov\u00fd voliteln\u00fd\nbonus nav\u00edc, ale v\u016fbec nen\u00ed pot\u0159eba. \u010cas od \u010dasu si d\u011bl\u00e1m t\u0159eba\nkv\u011bt\u00e1kov\u00e9\u00a0kar\u00ed.<\/p>\n\n<p>Na jednu po\u0159\u00e1dnou porci na olivov\u00e9m oleji osma\u017e\u00edm tak l\u017ei\u010dku\n<strong>\u0159\u00edmsk\u00e9ho km\u00ednu<\/strong> (rozhodn\u011b ne\u0161et\u0159it) a po chv\u00edli p\u0159id\u00e1m\n<strong>kousek kv\u011bt\u00e1ku<\/strong> (\u0159ekn\u011bme 200\u00a0g). Kv\u011bt\u00e1k je nejlep\u0161\u00ed\nnepravideln\u011b pokr\u00e1jet, aby z\u016fstaly jak v\u011bt\u0161\u00ed kousky, tak i\u00a0n\u011bjak\u00e1\ndrobotina, co se ve fin\u00e1le rozva\u0159\u00ed a p\u011bkn\u011b zahust\u00ed om\u00e1\u010dku. D\u016fkladn\u011b ho\nosma\u017e\u00edm, nejm\u00e9n\u011b 5\u201310 minut, a\u017e je kv\u011bt\u00e1k ze v\u0161ech stran viditeln\u011b\nope\u010den\u00fd. P\u0159id\u00e1m l\u017e\u00edci <strong>ostr\u00e9 kari pasty<\/strong>, rozm\u00edch\u00e1m a\ntaky ji trochu zasma\u017e\u00edm. P\u0159ihod\u00edm p\u00e1r strou\u017ek\u016f <strong>\u010desneku<\/strong>\nvelmi nahrubo pokr\u00e1jen\u00e9ho\u00a0\u2013 klidn\u011b v\u00edc, \u010d\u00edm m\u00ed\u0148 rozma\u010dkan\u00fd a na\n\u010d\u00edm v\u011bt\u0161\u00ed kousky pokr\u00e1jen\u00fd, t\u00edm m\u00ed\u0148 ost\u0159e \u010desnekov\u00fd bude v\u00fdsledek,\n\u010desnek se rozva\u0159\u00ed a z\u016fstane jen p\u0159\u00edjemn\u00fd hutn\u00fd t\u00f3n v\u00a0om\u00e1\u010dce (jako\nu\u00a0pe\u010den\u00e9ho \u010desneku). \u010cesnek jen zam\u00edch\u00e1m, aby se moc nesma\u017eil a hned\nzaleju asi p\u016fl litrem <strong>v\u00fdvaru<\/strong>. Zakr\u00fdt poklic\u00ed, st\u00e1nout plotnu na\nminimum a nechat pomali\u010dku dusit 20\u201330 minut. Mezit\u00edm si m\u016f\u017eete p\u0159ipravit\nr\u00fd\u017ei, n\u011bjak\u00e9 placky, nebo nic\u00a0\u2013 kar\u00ed se d\u00e1 j\u00edst jen tak, bez dal\u0161\u00edch\np\u0159\u00edloh.<\/p>\n\n<p>Kdo chce, m\u016f\u017ee s\u00a0v\u00fdvarem p\u0159ihodit i\u00a0<strong>kousek masa<\/strong>,\nt\u0159eba ku\u0159ec\u00edch prsou, nakr\u00e1jen\u00e9ho na v\u011bt\u0161\u00ed kousky. Nesolit, nesma\u017eit,\njen vhodit do t\u00e9 om\u00e1\u010dky a nechat t\u00e1hnout spolu s\u00a0n\u00ed. Do z\u00e1kladu se m\u016f\u017ee\np\u0159idat taky nahrubo nakr\u00e1jen\u00e1 <strong>brambora<\/strong>, stejn\u011b jako mnoh\u00e1\ndal\u0161\u00ed zelenina\u00a0\u2013 recept se d\u00e1 obm\u011b\u0148ovat s\u00a0cibul\u00ed, mrkv\u00ed, cuketou,\ndaj\u00ed se p\u0159idat lu\u0161t\u011bniny, je to velmi variabiln\u00ed z\u00e1klad.<\/p>\n\u00a0\n<hr \/>\n\n<h3>Na okraj<\/h3>\n\n<p><strong>Koriandr<\/strong>\u00a0\u2013 anglicky i\u00a0mezi profesion\u00e1ln\u00edmi kuchy\u0159i\n<em><a href=\"http:\/\/en.wikipedia.org\/wiki\/Coriander\">cilantro<\/a><\/em>\u00a0\u2013\nmiluju a kdybych m\u011bl za zahr\u00e1dky vyhodit v\u0161echno, tak koriandr p\u016fjde jako\nposledn\u00ed. Dlouho jsem p\u0159em\u00fd\u0161lel, co je to tak zvl\u00e1\u0161tn\u00ed chu\u0165\nv\u00a0asijsk\u00fdch pol\u00e9vk\u00e1ch, a\u0165 u\u017e v\u00a0instatn\u00edch nudl\u00edch, nebo t\u0159eba v\u00a0<a\nhref=\"http:\/\/en.wikipedia.org\/wiki\/Pho\">ph\u00f2<\/a> u\u00a0vietnamc\u016f. A\u017e zadlouho\njsem p\u0159i\u0161el na to, \u017ee to je pr\u00e1v\u011b koriandrov\u00e1 na\u0165. Jeho chu\u0165 a v\u016fn\u011b by\nmi velmi z\u00e1sadn\u011b chyb\u011bla pr\u00e1v\u011b v\u00a0ph\u00f2, kdy\u017e u\u017e ho n\u011bkdy d\u011bl\u00e1m,\nv\u00a0thajsk\u00fdch j\u00eddlech, ve v\u011bt\u0161in\u011b indick\u00fdch, ale t\u0159eba i\u00a0v\u00a0<a\nhref=\"http:\/\/en.wikipedia.org\/wiki\/Chilli_con_carne\">chilli con carne<\/a>, kde\nm\u00e1 taky rozhodn\u011b sv\u00e9 m\u00edsto. Tak\u017ee zas\u00edt koriandr aspo\u0148 do truhl\u00edku,\nkdy\u017e u\u017e \u010dlov\u011bk nem\u00e1 zahradu, zav\u010dasu (ne\u017e za\u010dne kv\u00e9st) ho sklidit a\nnakr\u00e1jet do mraz\u00e1ku, je z\u00e1kladem spokojen\u00e9ho kucha\u0159e. Proto\u017ee se koriandr\nprakticky nej\u00ed \u00fapln\u011b syrov\u00fd a jeho v\u016fn\u011b i\u00a0chu\u0165 v\u00a0mraz\u00e1ku vydr\u017e\u00ed\ndlouho, je\u00a0\u2013 t\u0159eba narozd\u00edl od pa\u017eitky nebo kopru\u00a0\u2013 mra\u017een\u00fd koriandr\npln\u011b funk\u010dn\u00ed a t\u00e9m\u011b\u0159 srovnateln\u00fd s\u00a0\u010derstv\u00fdm. Po zku\u0161enosti m\u016f\u017eu\n\u0159\u00edct, \u017ee takov\u00fd pytel koriandru v\u00a0mraz\u00e1ku je k\u00a0nezaplacen\u00ed\u00a0\u2013 sta\u010d\u00ed\nvz\u00edt hrst a hodit do pol\u00edvky\/om\u00e1\u010dky a sv\u011bt je hned kr\u00e1sn\u011bj\u0161\u00ed.<\/p>\n\n<p>Koriandrov\u00e1 sem\u00ednka jsou taky \u00fa\u017easn\u00e1 v\u011bc a v\u00a0mnoha p\u0159\u00edpadech\nnenahraditeln\u00e1 (do chlebov\u00e9ho ko\u0159en\u00ed nebo do spousty j\u00eddel v\u00a0kombinaci\ns\u00a0\u0159\u00edmsk\u00fdm km\u00ednem). Ale ta nem\u00e1m pot\u0159ebu si p\u011bstovat s\u00e1m, tady sp\u00ed\u0161\nvsad\u00edm na odborn\u00edky a kupuju si n\u011bjak\u00fd <a\nhref=\"http:\/\/www.e-koreni.cz\/prodej\/Koriandr-cely--50g\">kvalitn\u00ed koriandr<\/a>\nv\u00a0prodejn\u00e1ch ko\u0159en\u00ed.
